Polenta feels super fancy and luxurious, but it’s surprisingly quick and versatile. Read: It’s a great weeknight staple. This veggie-forward version, from Sarah Adler’s new cookbook, Simply Real Eating: Recipes and Rituals for a Healthy Life Made Simple, is next on our dinner rotation.

“I know I’m not supposed to pick favorites,” Adler writes, “but this dish just might be my favorite cozy meal of all time. I can’t even count the times I have made or brought this dish to friends and family when a hug in a bowl is needed. Even the pickiest eaters have been known to lick the plates.”

Lucky for you, it’s as easy to make as it is to eat and it comes together in all of 30 minutes. New weeknight staple? You bet.

Sausage and Veggies

1½ pounds ground turkey sausage (preferably organic)

6 carrots, quartered and chopped

2 red bell peppers, seeded and chopped

2 medium zucchini, quartered and chopped

2 teaspoons sea salt

2 teaspoons freshly ground black pepper, or to taste

1 bunch kale, torn or chopped into bite-size pieces

Herby Parmesan Polenta

1 cup polenta (corn grits)

1 tablespoon herbes de Provence

1 teaspoon sea salt

Butter or ghee, as needed

¼ cup shredded Parmesan, plus more as needed

1. Make the Sausage and Veggies: In a large saucepan over medium-high heat, cook the sausage, browning it on all sides. Add the carrots and cook, 5 to 7 minutes, then add the bell peppers and zucchini. Season with the sea salt and pepper. Add the kale and cook until wilted, about 3 minutes.

2. Make the Herby Parmesan Polenta: Meanwhile, bring 4½ cups of water to a boil in a saucepan with a lid. Add the polenta, herbes de Provence and salt, and cook until all the liquid is absorbed, 8 to 10 minutes. Add a few large pats of butter or ghee and the shredded Parmesan, and stir in until melted.

3. When the polenta is ready, serve in individual bowls topped with the sausage-vegetable mixture. Garnish with extra Parmesan, if desired.
